Well this is a popular South Indian snack which is made by marinating, deep frying along with seasoning pieces of chicken with quintessential South Indian spices which is curry leaves and mustard seeds. There are theories revolving around the fact how this dish got its name. It is may be the restaurant which invested the recipe may be was first made in 1965 while the other notion is that 65 chilli peppers which is used in the preparation of the dish. Well the name itself gives way whatever is on the plate. This dish is a combination of the words attu and pesara, which means dosa or crepe along with moong dal in Telugu. Well one thing to notice is that it is different from the conventional urad dal which is different from what is used in dosa batter. Pesarattu made from spilt or whole green moong lentils. In the whole of Andhra Pradesh, this crisp and nutritious dosa is a popular breakfast recipe served with tangy ginger chutney.

Khubani ka Meetha is a sweet dish which is made from dried apricots is one of the popular Hyderabadi desserts which is sweet and served at weddings and other traditional functions. This dish is prepared by boiling apricots with chaashni (sugar syrup) until it blends into a thick soup like thing. This one is garnished with fresh cream and served with apricot kernels and blanched almonds on top.

Now if you have compulsive sweet tooth then this one is packed with true Hyderabadi richness. This dessert is made from deep frying bread slices and then soaking them in hot milk which is infused with cardamom and saffron. Well the name of the dish is derived from double roti which is term used for milk bread. This one is topped with dry fruits and raisins. This dish is very similar to Mughlai dessert Shahi Tukda in texture and taste.

5. Hyderabadi Marag

Marag is thin mutton soup which forms an important part of the Hyderabadi cuisine and is usually served at weddings. All the popular restaurants across the state which usually serve authentic Hyderabadi cuisine are served to have it as an appetizer. This one is prepared from tender mutton pieces with bone, Marag is loaded with flavors which is drawn from meat chunks as well as rich ingredients like cashew nuts and cream.
